Truffled Cauliflower & Burrata Pizza

Eating is not an event for a kid. My husband and I can leisurely sit through a meal for 4 hours, without children. My kids?  Mealtime rarely lasts longer than 20 minutes. Eating is strictly a utilitarian function that provides them with additional energy to move on their path of destruction,  I mean adventure. They don't do well waiting in line for a table only then to wait for food.  I avoid going to restaurants with long wait times with the kids.  

Truffled Cauliflower & Burrata Pizza

Therein lied the problem with Stanziatos.  Friends told us about an amazing place for pizza, but the downside was a dinnertime wait of upwards of two hours.  Brilliant solution: LUNCH!  

This summer, we had the pleasure of experiencing pizza from Stanziato's in Danbury, Connecticut. I was blown away by both their flavor combinations as well as their usage of local ingredients. They are strong supporters of Holbrook Farm in Bethel, Connecticut and often create dishes specifically around Holbrook's offerings.  

A particular pizza that blew me away was the pizza with roasted cauliflower, burrata cheese and truffle oil.  Was it possible that cauliflower had ANY business being on a pizza?  Indeed. It was a genius combination that the kids loved and that I've felt inspired to attempt to recreate at home. With the help of store bought pizza dough, this gourmet pizza has become a go-to family favorite.


Cut a head of cauliflower into florets.

In a bowl, combine cauliflower, olive oil, kosher salt and freshly ground pepper

Roll out store-bought dough to fit a large sheet pan.
Spread cauliflower florets evenly across dough.

Slice burrata as thinly as it will allow you to.

Evenly place sliced burrata on cauliflower.
The cheese will melt, so don't add too much.

Finished product... moments before it was completely devoured.

Truffled Cauliflower & Burrata Pizza

Ingredients

1 small head of cauliflower, cut into florets
2 TBSP olive oil
Kosher Salt and freshly ground pepper, to taste
8 ounces burrata, sliced
store bought pizza dough, 16 ounces
Truffle Oil, few sprinkles
Chopped chives (optional)

Directions

Preheat oven to 500 degrees F, with rack placed in bottom 1/3 of the oven.

1. Combine cauliflower florets, olive oil, kosher salt and freshly ground pepper in a bowl and toss to coat.  (Marinate cauliflower up to two hours before baking the pizza)
2. Bring pizza dough to room temperature. Using a floured surface, roll out dough to fit a large sheet pan.
3. Sprinkle marinated cauliflower evenly over pizza dough.
4. Evenly place burrata over cauliflower.  It may seem that there isn't enough cheese, but don't be discouraged.  The cheese will melt and will uniformly cover the dough.
5. Bake in oven for 15 minutes. 
6. Remove from oven. 
7. Optional: Turn on Broiler to Hi. Broil for 3 minutes. Remove from broiler and allow to cool for 3-4 minutes.  
8. Sprinkle sparingly with truffle oil.
9. Cut with pizza cutter or sharp kitchen scissors.
